FILLINGS
Although the old favourite of jam and cream is perfectly satisfactory, there are countless alternatives. Here are a few VERY simple ones, and I'll add some others soon!
- My personal favourite is whipped double cream, scattered with fresh sliced strawberries! However almost any fruit, even tinned peaches, with whipped cream will make a delicious filling.
- Whipped Double Cream I often fold a tablespoon of flavouring to 1/4 pint whipped cream to add that extra zing ... liqueurs such as peach schnapps or tia maria, or a non-alcoholic version is a teaspoon of instant coffee dissolved in a teaspoon of warm water. Use your imagination!
- Buttercream. 60g (2 oz) room temperature butter; 125g (4oz) sieved icing sugar; Beat together, then add about a teaspoon of flavouring liquid ... milk, warm water, vanilla essence, instant coffee or cocoa dissolved in a scant dessertspoon of warm water etc to make a 'fluffy' consistency.
- Lemon Cream Cheese 60g (2oz) room temperature cream cheese; 1 teaspoon grated lemon rind; 1 tablespoon lemon juice; 125g (4oz) sieved icing sugar; Beat together.
- Orange Cream Cheese ... as above but substitute cream for lemon juice
